To achieve a medium-rare lamb loin with a nice and flavourful crust, it needs to be cooked at two different temperatures. First, the meat is seared at a high temperature to create a good crust. Then, it is finished at a lower temperature to ensure that the meat is perfectly medium-rare inside.

Gluten-free cream puffs are made just like regular cream puffs by first heating the dough to 110 ºC. This helps prevent the cream puffs from collapsing during baking.
