Beurre Monté – Emulsified Butter Sauce
Beurre Monté is a delicious sauce made mainly of butter. A liquid, often water, is added to the butter, which makes it thicker and creamier. A delicious sauce for vegetables and fish.
A Beurre Monté is usually very difficult to make because it requires a very precise temperature. Temperature controlled cooking makes it much easier to make this delicious sauce, as the temperature is automatically kept at the right level.

Beurre Monté
1 tsp. Water
100 gram Salted butter (diced)
Steps
Emulsify the butter
Heat a saucepan or frying pan to 75 °C.Add the water.Whisk in the butter, starting with one cube at a time. Once the sauce has emulsified, you can add more butter cubes at a time. Continue until all the butter is added and incorporated.
