Sweet Potato Chips

The chips are crispy, salty and a little sweet – the best of both worlds.

Instead of using regular potatoes, these homemade chips are made from sweet potatoes. The sweet potatoes give the chips a nice orange colour and a sweeter taste.

Ingredients

1.5 l Oil for frying

3 pcs. Sweet potato

1 tsp. Salt

Steps

Preheat the oil

Pour the oil into a pot and set the temperature to 180 °C. Allow the oil to heat up. The bottom of the pot reaches 180 ºC long before all of the oil, so allow the oil to preheat for around 10 minutes.

Prepare the potatoes

Peel the sweet potatoes and cut them into thin slices, about 1 mm. A bit thicker is ok. Use a mandolin slicer, if you have one.

Fry the chips

Add some of the potato slices to the oil and fry for 5-6 minutes until they almost have stopped sizzling. They should not gain much colour or they will become bitter.

Remove them from the oil and place on paper towels or similar. Season with salt while they are still hot, this help the salt to stick better to the chips.

Repeat until all the chips are cooked.

Notes

If you are unsure whether the potatoes are sliced thin enough, you can start by cooking a few to test before cutting the rest. But the chips need to cool completely before you can tell how crispy they are.
