Poached Broccolini
Broccolini is also known as Aspabroc, or Baby Broccoli, and is a delicious vegetable that resembles a cross between asparagus and broccoli.
If you struggle to cook vegetables on a daily basis, or you want to make some extra tasty vegetables on the weekend, this is a great basic recipe for tasty poached vegetables.
While the recipe uses broccolini, it works equally well with most other vegetables. Just adjust the cooking time.
Ingredients
Poached Vegetables
1.5 l Water
1 tbsp. Salt
1 tbsp. Sugar
0.5 pcs. Lemon
25 gram Butter
500 gram Broccolini or vegetables of your choice
Steps
Bring the water to a boil
Pour the water into your pot and set the temperature to 105 ºC. When the water boils, lower the temperature to 95 ºC.
Add salt, sugar and the juice of half a lemon. When you have squeezed the lemon, then also add the rest of the lemon, peel and all, it will add flavour to the water.
Add the butter.
Prepare the vegetables
Add the broccolini or other vegetables of your choice to the water.
Cook the broccolini for 20-25 minutes. Depending on how thick they are and how soft you like them.
Notes
Average cooking times for vegetables:
– Green asparagus: approx. 10 minutes.
– Small carrots: approx. 15 minutes.
