Breaded pork patties with stewed peas and carrots


Breaded pork patties served with stewed peas and carrots offer a comforting and hearty meal that’s perfect for any day of the week.

Karbonader, or krebinetter, epitomizes Danish cuisine—a rustic and wholesome dish that celebrates simplicity and robust flavours. Paired with boiled potatoes, stewed peas and carrots, it embodies a timeless classic.

The patties are coated in breadcrumbs, providing them with a protective layer that allows them to withstand slightly higher cooking temperatures than if the meat were cooked without breading.


Boiled Potatoes

1 kg Potatoes

Stewed Peas and Carrots

0.5 l Water

300 gram Carrot, diced

300 gram Green peas

30 gram Butter

3 tbsp. All-purpose flour

1 tbsp. Soy sauce

1 pcs. Parsley, a bunch

Salt and Pepper

Breaded Pork Patties

Breadcrumbs as needed

1 tbsp. Salt

1 tsp. Pepper

500 gram Minced pork

Oil for frying

Butter for frying


Boil potatoes

Peel the potatoes and prepare them using the recipe “Boiled potatoes with one click“.

Make stewed vegetables

Bring the water to a boil in a pot at 120ºC. Then lower the temperature to 103ºC.

Peel and dice the carrots and blanch them together with the peas for a few minutes. Drain them but save the cooking water for the sauce.

Heat a pot to 120ºC, melt the butter and add the flour while whisking. Let it heat through to remove the flour flavour. Gradually add the soy sauce and vegetable cooking water while whisking to avoid lumps. Continue adding the vegetable water until you reach the desired consistency.

Let the sauce simmer while the patties are cooking.

Finely chop the parsley.

A few minutes before serving, add the blanched vegetables to the sauce. Stir in the finely chopped parsley and season the sauce with salt and pepper.

Shape and fry the patties

Mix breadcrumbs, salt, and pepper in a deep plate.

Form the minced pork meat into 4 patties and turn them in the breadcrumb mixture so they are well covered.

Heat a pan to 190ºC and add equal parts oil and butter. Add the patties and fry for about 5 minutes on each side until golden brown and cooked through.


The portion size of meat per patty varies between 125-200g. Adjust the amount of meat according to the number of servings and personal preference.
