
Port Wine Glaze
Port wine glaze or port wine syrup is really just port wine and sugar reduced down. Simple but super flavorful, perfect for glazing meat, as it adds a nice sweetness and a depth of flavour to the meat.

Port Wine Syrup
110 gram Port
60 gram Sugar

Port wine syrup
Combine the port wine and sugar in a pan. Set the temperature to 115ºC and stir briefly until the sugar has dissolved. Then allow the syrup to reduce by half, this will take about 15 minutes. It should become a thick and slightly sticky syrup that easily coats a piece of meat.Pour the syrup into a sterilized jar or bottle.
Notes
Use the syrup to glaze pork cheeks, neck chops, pork belly or other meat. Or try it in cakes, desserts or with ice cream.
