Poached Vegetables

This is a universal recipe for cooking vegetables and potatoes.

This recipe uses exactly 1.5 litres of water. This makes it possible to create a program that brings the water quickly to a boil – but where it doesn’t boil over, as the exact amount of water is known.

Just start the program in the recipe and everything will run automatically. First the water is heated at full power (P), once it boils the temperature is automatically reduced to 95°C, allowing the vegetables to complete cooking without the risk of overcooking. It is important to use exactly 1.5 litres of water for the program to work optimally.

Poach the vegetables
Rinse your vegetables, peel if necessary. Add water, salt and vegetables to a pot. Start the program and make sure you set your cook top to effect "P". Small delicate vegetables will take around 10-15 minutes. Hard or larger pieces of vegetables will require more time. Test the vegetables with a sharp knife, to see if they have reached your preferred level of doneness.

Notes

If you want extra flavour for your vegetables, try adding 1 tablespoon of sugar to the water.

You can also add half a lemon. Squeeze the juice into the water and then add the rest of the lemon – peel and all. The lemon adds acidity and a great flavour.

Herbs are also a nice addition to the cooking water, use whatever you have on hand or prefer.
